Spelt (triticum speltum) is a source of fibre, nutrients and protein in a way that is easily digested. An ancient strain of wheat, Spelt's origins are traceable beyond the Bronze Age (4000 to 1000BC), and is a distant cousin to moder wheat. Characterised as a "covered wheat"- its sturdy husk or hull does not "thresh free"- remaining with the kernel during the harest. This is unlike modern wheat, which was bred to lose this outer protection when harvested. With the hull intact, the grain is protected, enhaning the retention of nutrients and improving freshness during shipping and storage. Later, the hull is separated just prior to being milled. What unfolds is an easily digested grain that is higher in protein than modern wheat.
